And I was thinking about putting a Win 10 Guest on as well. This prevents you locking a Windows license to the hardware, which running as role does. Of course some will say - well I only have one server so I don't worry about migrating, etc, etc. By not installing the full OS, you also have a smaller footprint for the hypervisor. You also make it much more difficult to break licensing by installing non hardware management stuff in a place that would then consume a license. I expect that this is just a lab, so anything is really fine here.
But there are major reasons why you want the "right way" even in a lab, so that you are prepared for doing it in production. If you do plan to run a server VM, then by all means, get the Standard which gives you license for two Server VM's on one host. The biggest difference between Hyper-V Server, Windows Server Standard and Windows Server Datacenter is licensing, as the hypervisor itself is exactly the same for all three distributions. There are differences among some host capabilities on the 3, such as Storage Spaces Direct is only available on Datacenter. And Hyper-V Server does not support most of the roles and features of Standard or Datacenter, but that is because of the way Hyper-V Server is licensed - those roles and features are removed to prevent the end user from violating the licensing of Hyper-V Server.
The free hyperv server is just windows standard core command line only, no gui. If you are learning hyper v I would install standard server with the gui desktop experience. There negligible performance different between gui and core installations. In a production environment windows standard core is the best option, simply because there is less there for a hacker or virus to attack.
As long as you are using Windows standard exclusively for its hyperv role you can install it without using one of your licences.
This also will allow you to use features not available in the free hyper v server, provided that you can justify using them for the hyper v server roll.

Question here would be what would you do after all the stuff is setup i. In case you are planning to have couple VM servers, you can build Failover Cluster. As good alternative, you can follow other route. StarWind Free will server as a shared storage for your cluster while your nodes will be running highly available VMs.
